Cecil & Julie Gurganus - Sorghum Molasses

Julie Gurganus – People will say, “Do you see any frog eyes yet?” It’s a way the bubbles change. At the end it gets real candy-like so there’s lots of bubbles, but at the end they kind of change, so they pop.

Cecil Gurganus – It can be inconsistent too as far as looking at it and saying exactly when to take it off. If you overcook, eventually you can make candy, you take all the water out and its sticky. People did used to make taffy out of it, but we’ve never tried doing that. It took us a little while to understand it but people refer to molasses in the plural, like “They’re almost done.”
