Join App State’s Dr. Brett Taubman for a fascinating tour of fermentations. There will be opportunities to sample each of the fermented products described, all prepared by the Fermentation Sciences program at App State. Taubman will describe the microbes involved in the fermentation process and their potential benefits to human health.
The science, techniques, nutritional benefits, and flavor profiles of fermented meats, dairies, vegetables, and, of course, beverages will be explored. This event is guaranteed to open your minds and palates to a whole new world of food preparation and flavors that you have never experienced before
About the Speaker:
Taubman is a professor in the A.R. Smith Department of Chemistry and Fermentation Sciences at App State. He teaches analytical and brewing chemistry as well as introductory chemistry courses.
He has earned bachelor’s degrees in both finance and chemistry from the Pennsylvania State University and Montana State University, respectively, and a Ph.D. in analytical chemistry from the University of Maryland in 2004. Following his graduate studies, he worked as a Post-doctoral Research Associate at the Pennsylvania State University before joining the faculty at App State in 2007.
Taubman has found his research niche as a vice chemist, exploring the fascinating chemistry of beer and hemp derived cannabinoids and terpenes. He helped to develop the four-year degree program in Fermentation Sciences, for which he is currently the Director. He also founded and serves as President of Ivory Tower, Inc., a 501(c)(3) non-profit corporation that supports fermentation sciences research and education.
The organization’s main fundraising event, the High Country Beer Fest, has been a premier event in the High Country for more than 15 years. To date, Ivory Tower has raised nearly a million dollars for the Fermentation Sciences program.
